I love this time of year for making homemade soup. Its quick, easy, healthy and delicious.
Ingredients
1kg Carrots
1/2 chilli (or to your taste) chopped
1 clove garlic
1 onion
900ml of vegetable stock
1 tbsp coriander
salt and pepper to taste..
Method
1..Chop all the carrots, onions, chill, and clove of garlic and pop into a saucepan.
2..Add the vegetable stock
3..Boil for about 25 minutes or until soft.
4..Pop into a blender I have a vitamix and can really recommend them, if you don't have a blender a handheld blender will work too (these can be picked up from the shops for as little as £5.
5..Once completely blended I pop it back into a saucepan, heat up and add the coriander and salt and pepper to taste.
6..Eat straight away or once cooled these can be put into lidded containers and stored for a few days.
